Botanically, it is not a true pepper: it belongs to the ginger and cardamom family. Our harvest is done entirely by hand, then the seeds are dried in the open air, a method that carries on traditional farming know-how. The small brownish seeds reveal a very complex aroma.\n\n<h4>Tasting our grains of paradise from Benin<\/h4>\nThe small seeds first stand out for their warm, very peppery aroma, which then gently gives way to lemony, resinous notes with lovely hints of camphor. These flavours are reminiscent of ginger and green cardamom, an aromatic richness that appeals to top chefs. A true burst of flavour.\n\n<h4>A versatile spice: from meat to pastries<\/h4>\nThis remarkable false pepper is very versatile in the kitchen. It is perfect in slow-cooked stews and wonderfully lifts lamb or roast fish.
