Description
Eucalyptus honey comes from the Pahou region, in the Atlantique department of southern Benin. From November to February, bees forage on eucalyptus flowers. The honey is harvested by local beekeepers, then jarred without being heated or pasteurised.
What you will taste
A light amber colour and a naturally creamy, smooth texture. The nose is delicate and caramelised, with a woody touch of eucalyptus. On the palate, complex, lightly caramelised flavours that linger. It is this roundness that pastry chefs love so much.
How to enjoy it
In baking, in a crème brûlée or madeleines. With fresh cheeses. To sweeten an Earl Grey tea or a hot infusion. Or simply on a crêpe.
