Description
Savanna honey comes from the Atacora mountains, in northern Benin. Unlike our single-flower honeys, it is a multi-flower honey: from April to July, bees forage on the successive blossoms of more than 200 savanna species.
Atacora beekeepers harvest it by hand from traditional log hives handed down by their ancestors. The honey is then jarred without being heated or pasteurised.
What you will taste
A golden amber colour and a smooth, slightly thick texture. The nose is floral, wild and complex; the palate is rich, with a long finish. As the flowers change from one season to the next, each harvest has its own nuance: the signature of a living terroir.
How to enjoy it
On country bread at breakfast, in plain yoghurt or a herbal tea. With strong cheeses such as Munster or a mature Reblochon. In marinades for grilled or roasted meats, from rib of beef to Peking duck.
