Description

Jujube honey comes from the Highlands of Madagascar. From November to January, bees forage on the flowers of the wild jujube tree, which bears jujube fruits. It is one of the rarest honeys in our collection, jarred without being heated or pasteurised.

What you will taste

A golden amber colour and a smooth texture. The nose is woody and fruity, with a caramelised touch. On the palate, it is both mild and intense, with a very long finish.

How to enjoy it

Pure, by the spoonful, to appreciate all its finesse. With fresh goat’s cheese or a mature cheese such as Comté. In Middle Eastern pastries, such as baklava or gazelle horns.

Why has my honey crystallised?

Crystallisation is a natural process: over time and in the cold, the glucose in honey forms small crystals. It changes neither the taste nor the quality, and is rather the sign of a honey that has not been heated. To make it more liquid, place the open jar in a warm water bath, without exceeding 40 °C.

How should I store my honey?

At room temperature, away from light and moisture, with the lid tightly closed. There is no need to refrigerate it. It keeps for 2 years.

How can I tell if your honey is pure?

Our honeys are 100% honey: nothing is added (no syrup, sugar or preservatives) and they are neither pasteurised nor heated. Each jar comes from a precise origin, shown on its product page: harvest region and blossoming period.

Why can the colour or texture vary from one jar to another?

Each harvest depends on the blossoming and the season. A raw honey, neither blended nor standardised, may change slightly in colour and texture from one harvest to the next: it is the mark of a natural product.

Is honey suitable for young children?

Like all honey, it is not recommended for children under one year old.

When will I receive my order?
